Any unlocked phone that can add an eSIM: recent iPhones, Pixel, Samsung, and most dual-SIM Androids. The install screen is Settings → Cellular → Add eSIM.
Most packages start when the profile first attaches to a network, not at purchase. Unused profiles can usually be cancelled for a wallet refund.
